I want to edit the chinese translation but the character set is not correct in all columns. I have checked the fonts according to information on your site.

This means that you have correct font/charset settings for "Chinese" language, but not for "Traditional Chinese" and others. So just adjust settings for "other" Chinese languages and they will be fine too.
